I have print logger se running. When I apply security to the printer
so only certain people can print the logger no longer records the print
jobs. If I add the everyone group back it works again. How do I lock
one printer down aswell as keep logging?

Please add SYSTEM group with full permissions to this printer
security settings. It resolves this problem.
